Retten er en del af det peruanske k\u00f8kken og er popul\u00e6r i mange regioner i landet.<\/p>\n\n\n\n<p>Seco de pollo er en gryderet, der typisk tilberedes ved at simre kyllingestykker sammen med krydderier, gr\u00f8ntsager og urter. Retten er kendt for sin rige smag og saftige tekstur. En vigtig ingrediens i secosauce er &#8220;chicha de jora&#8221;, der er en traditionel peruviansk \u00f8l lavet af g\u00e6rede majs. Denne ingrediens bidrager til den karakteristiske smag af retten.<\/p>\n\n\n\n<p>Selvom secos oprindelse er peruansk, er der ogs\u00e5 variationer af retten i andre latinamerikanske lande som Ecuador og Colombia, hvor den ogs\u00e5 nydes som en popul\u00e6r del af den lokale madkultur.<\/p>\n\n\n\n<p><strong>Forberedelsestid: 30 min.<\/strong><\/p>\n\n\n\n<p><strong>Tilberedningstid: 25 min.<\/strong><\/p>\n\n\n\n<p><strong>Ingredienser:<\/strong><\/p>\n\n\n\n<ul>\n<li>1 kg kyllingestykker (fx l\u00e5r eller bryst)<\/li>\n\n\n\n<li>2 spsk vegetabilsk olie<\/li>\n\n\n\n<li>1 l\u00f8g, hakket<\/li>\n\n\n\n<li>3 fed hvidl\u00f8g, knust<\/li>\n\n\n\n<li>1 tsk spidskommen<\/li>\n\n\n\n<li>1 tsk paprika<\/li>\n\n\n\n<li>1 tsk t\u00f8rret oregano<\/li>\n\n\n\n<li>2 spsk frisk koriander, hakket<\/li>\n\n\n\n<li>2 store kartofler, sk\u00e5ret i tern<\/li>\n\n\n\n<li>2 guler\u00f8dder, sk\u00e5ret i skiver<\/li>\n\n\n\n<li>1 r\u00f8d peberfrugt, sk\u00e5ret i strimler<\/li>\n\n\n\n<li>1 kop kyllingebouillon<\/li>\n\n\n\n<li>\u00bd kop chicha de jora (peruviansk \u00f8l) eller en m\u00f8rk \u00f8l.<\/li>\n\n\n\n<li>Saften af 1 limefrugt<\/li>\n\n\n\n<li>Salt og peber efter smag<\/li>\n<\/ul>\n\n\n\n<p><strong>Tilberedning:<\/strong><\/p>\n\n\n\n<ol>\n<li>Varm olien op i en stor gryde over medium varme. Tils\u00e6t l\u00f8g og hvidl\u00f8g, og saut\u00e9r indtil de er bl\u00f8de og let gyldne.<\/li>\n\n\n\n<li>Tils\u00e6t kyllingestykkerne i gryden og brun dem p\u00e5 alle sider.<\/li>\n\n\n\n<li>Krydr kyllingen med spidskommen, paprika, oregano, salt og peber. R\u00f8r godt, s\u00e5 krydderierne fordeler sig j\u00e6vnt.<\/li>\n\n\n\n<li>Tils\u00e6t kartofler, guler\u00f8dder og r\u00f8d peberfrugt til gryden. H\u00e6ld kyllingebouillon og chicha de jora (eller m\u00f8rk \u00f8l) i gryden, og r\u00f8r det sammen.<\/li>\n\n\n\n<li>Bring gryden i kog, og reduc\u00e9r derefter varmen til lav. Lad det simre under l\u00e5g i ca. 30-40 minutter, eller indtil kyllingen er m\u00f8rt og kartoflerne er kogte.<\/li>\n\n\n\n<li>Tils\u00e6t limejuice og frisk koriander til retten. R\u00f8r forsigtigt rundt.<\/li>\n\n\n\n<li>Smag til med ekstra salt og peber, hvis det er n\u00f8dvendigt.<\/li>\n\n\n\n<li>Server seco de pollo varmt sammen med ris eller quinoa.
