Retten er opkaldt efter byen og dens ber\u00f8mte sauce, Huanca\u00edna-saucen.\n\nHistorien bag \"Papa a la Huanca\u00edna\" er ikke helt klarlagt, men den menes at have r\u00f8dder i den indf\u00f8dte peruvianske madkultur, der har eksisteret i omr\u00e5det i \u00e5rhundreder. Retten er kendt for at kombinere indf\u00f8dte peruvianske ingredienser med spanske p\u00e5virkninger.\n\n\"Papa a la Huancaina\" best\u00e5r prim\u00e6rt af kogte kartofler, der sk\u00e6res i skiver eller terninger og serveres med Huancaina-saucen. Retten er ogs\u00e5 blevet popul\u00e6r uden for Peru og findes nu p\u00e5 mange peruvianske restauranter rundt omkring i verden.\n\nHistorien om \"Papa a la Huancaina\" afspejler den rige kulinariske arv og fusionen af \u200b\u200bkulturer i Peru, og den er et eksempel p\u00e5, hvordan traditionelle retter kan udvikle sig over tid og blive en del af den nationale identitet.\n\n<strong>Forberedelsestid: 15 min.\nTilberedningstid: 30 min.<\/strong>\n\n<strong>Ingredienser<\/strong>:\n5 gule chili friske (eller et stk t\u00f8rret som vi bruger herhjemme, da de ikke kan k\u00f8bes i Danmark)\n1 fed hvidl\u00f8g\n\u00bd kop planteolie\n2 kogte \u00e6g\n2 tomater\n4 sorte oliven\n1 kg kartofler\nSalatblade\nSalt\nLidt m\u00e6lk til sovsen\ngurkemeje\nkarry\n1 lille stk af 1 l\u00f8g\net lille stk af en r\u00f8d peberfrugt\n1 pakke Tucs eller andre saltet kiks\n1 stor h\u00e5ndfuld peanuts eller friske jorn\u00f8dder.\n\n<strong>Tilberedelse:<\/strong>\n\nFjern fr\u00f8 fra chilipeberen, vask dem godt ved at gnide den ene mod den anden.\n\nVarm lidt olie op i en stegepande og svits de afsk\u00e5rne chilipeber der sammen med hele hvidl\u00f8get.\n\nPut det i blenderen og tils\u00e6t stegte peanuts, tucs, en smule karry og gurkemeje, det lille stykke r\u00f8d peberfrugt og et lille stykke l\u00f8g. H\u00e6ld lidt m\u00e6lk over og blen.
